Cinnamon roll butter swim biscuits

These cinnamon roll butter swim biscuits are soft, golden, and baked in butter with a cinnamon swirl and vanilla glaze. An easy one-bowl biscuit recipe perfect for beginners.

Ingredients
  

Cinnamon Roll Mix
  • 1/2 cup 1 stick unsalted butter
  • 1/2 cup packed light brwn sugar
  • 2 tsp cinnamon
  • 1/8 tsp salt
Biscuits
  • 1 stick unsalted butter
  • 2 ½ cups all-purpose flour
  • 4 tsp baking powder
  • 1.5 tbsp granulated white sugar
  • 1 tsp salt
  • 2 cups buttermilk
Cinnamon sugar topping
  • 2 tbsp granulated sugar
  • 1/2 tsp cinnamon
Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk or heavy cream
  • 1 tsp vanilla extract

Equipment

  • Measuring Cups/Spoon
  • Large bowl
  • Spatula or Wooden Spoon

Method
 

  1. Preheat the oven to 425
  2. Place a stick of butter in the pan and melt it for 4-5 mins, do not let it brown
  3. Add flour, sugar, baking powder and salt to a bowl and whisk.
  4. Add in the buttermilk and mix with a wooden spoon until well incorporated.
  5. Mix in half the cinnamon roll mix
  6. Remove the pan from the oven and carefully add the batter on top
  7. Add the remaining cinnamon roll mixture and swirl with a knife
  8. Sprinkle on the cinnamon sugar topping
  9. Bake for 25-35 Until golden brown (Checking every few mins at 20 mins)
  10. Let sit for 10 mins then add the glaze to the top
  11. Serve and Enjoy

Notes

The middle should be set. If your oven is browning the biscuits before the center is set, lightly cover with foil to give the biscuits time to fully cook.  I would start checking this around 20 min.
Rotate the pan halfway through to ensure even baking
