Copy Cat McDonalds Apple Pie

Tender, declicious apple filling, enclosed in a flaky pie crust sprinkled with cinnamon sugar will make you say we got mcdonalds at home.

Ingredients
  

  • 4 apples peeled cored and diced
  • ¼ cup unsalted butter
  • ½ cup brown sugar
  • 1 ½ tsp ground cinnamon
  • ½ tsp salt
  • ¼ tsp nutmeg
  • Lemon juice* not pictured see notes
  • 3 tablespoons corn starch + 2 tablespoons water
  • 2 sheets store-bought pie crust
  • 1 egg + 1 tsp water
  • 3-4 tablespoons sugar + 2 tsp cinnamon

Equipment

  • Medium-Sized Bowl
  • Spatula
  • Parchment Lined Baking Sheets
  • Rectangle cookie cutter (optional)

Method
 

  1. Preheat the oven to 400 degrees
  2. Line a baking sheet with parchment and set aside
  3. Once apples are peeled, cored and chopped, place them into a pan with butter over medium heat.
  4. Add in the brown sugar, cinnamon, salt and nutmeg
  5. Cook until fragrant and the apples have softened a bit (4-6 mins)
  6. Mix the cornstarch and water together and then pour into the apple mixture
  7. Stir frequently as the liquid thickens
  8. Remove from heat and allow to cool.
  9. Cut out 8-10 rectangles with a cookie cutter or with your knife from the pie crust.
  10. Scoop a heaping tablespoon of filling in the center of the pie crust
  11. Lay a second rectangle over the top
  12. Crimp together with a fork
  13. Cut 3 slits into the tip for venting
  14. Brush with egg wash and sprinkle generously with cinnamon sugar
  15. Bake for 12-15 mins or until golden brown
  16. Sprinkle more cinnamon sugar right out the oven

Notes

Squeeze a bit of lemon juice on the apples after you cut each one to prevent browning (I cut them add lemon juice, cut add lemon juice, etc)
The cornstarch and water should be mixed together to create an almost milk like consistency slurry - this will create an almost jammy consistency for our filling.
If baking with children, you'll want to either a) make the apple pie filling ahead of time to allow it to cool before making the pies or b) explain that the filling is hot and they can watch you will you place it in the center of the dough then invite them back into the activity
Leftover Apple filling can be stored up to five days in the fridge in an airtight container.
