Eggnog Coffee Cake with Streusel Topping

Ingredients
  

Streusel Topping
  • 3/4 cup AP flour scooped and leveled
  • 3/4 cup packed light brown sugar
  • 1 teaspoon cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp salt a pinch
  • 1/2 cup unsalted butter melted
Eggnog Cake
  • 1 cup sugar
  • 9 tbsp unsalted butter room temperature
  • 6 tbsp sour cream
  • 1/4 cup + 1 tbsp eggnog
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour scooped and leveled
  • 2 tsp baking powder
  • 1/4 tsp salt
Eggnog Glaze
  • 3/4 cup powdered sugar
  • 4 tbsp eggnog
  • 1/8 tsp pinch of nutmeg
  • 1/8 tsp pinch of cinnamon

  • 8-inch round cake pan
  • Parchment Paper
  • Measuring Cups and Bowls

Method
 

  1. Preheat oven to 350°F (176°C). Prepare an 8-inch cake pan with a parchment circle in the bottom and add non-stick coating to the sides and top of parchment circle.
For the streusel:
  1. Whisk flour and brown sugar to together, breaking up any clumps
  2. Add in the cinnamon and nutmeg, mix well
  3. Last. stir in the melted butter until well incorporated with no oil patches and no dry patches.
  4. Set aside.
For the cake:
  1. Beat the sugar and butter until light in color and fluffy, 3-4 minutes.
  2. Beat in the eggs until smooth
  3. Add the sour cream and eggnog and mix until well incorporated.
  4. Stir in the vanilla extract and mix until smooth, making sure to scrape down the bowl.
  5. Add the flour, baking powder, and salt to the batter and mix until smooth (it will be thick).
  6. Spread the batter evenly into the prepared cake pan.
  7. Sprinkle the streusel evenly over the top of the cake
  8. Bake the cake for 40-45 minutes.
  9. The cake should be a nice golden color on top. Check doneness with a toothpick
  10. The streusel on top will firm as it cools.
  11. Allow the cake to cool, then remove it from the cake pan.
For the glaze:
  1. Combine all ingredients and whisk until smooth
  2. Drizzle over the cake.
  3. Serve it warm or cool.
