The Best Gingerbread Layer Cake

Well, it is beginning to smell like Christmas! All the more with this recipe entitled The Best Gingerbread Layer Cake.

Ingredients
  

  • 6 tbsp unsalted butter melted
  • 1 cup brown up sugar
  • 1 cups molasses
  • 1 cup warm water
  • 1 cup buttermilk room temperature
  • 2 large eggs
  • 1 tablespoons ground ginger
  • 1/2 tablespoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 2 cups all-purpose flour
  • Non-stick baking spray

Method
 

  1. Preheat oven to 350 degrees.
  2. Spray pans with baking spray and set aside.
  3. In a large bowl whisk together butter, sugar, molasses, eggs, water, and buttermilk.
  4. Next, add in ginger, cinnamon, cloves, salt, baking powder, flour and baking soda.
  5. Whisk until just combined.
  6. Divide between the pans and bake for 25 mins or until a toothpick comes out clean.
  7. Allow cakes to cool for 10 mins in the pans before removing to cool on baking rack.
  8. For the frosting: Add cream cheese to bowl. Mix it with an electric mixer until smooth.
  9. Add in powdered sugar and vanilla.
  10. Mix until smooth.
  11. Add to piping bag with a 1A piping Tip. Pipe even layer of cream cheese frosting between each layer.
  12. Add decoration to top of cake and serve.

Notes

It’s easier to frost a frozen cake. If time permits freeze the layers of cake if not using a piping tip to add frosting to avoid crumbs.
