Copy Cat Girl Scout Do Si Do Cookies

Ingredients
  

  • ½ cup unsalted butter room temperature
  • 1 cup light brown sugar packed
  • 1 egg brought to room temperature*
  • 2 tsp vanilla extract
  • ½ cup creamy peanut butter
  • 1 cup all purpose flour scooped and leveled
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 cup quick cooking oats
Filling
  • ½ cup creamy peanut butter
  • ¼ cup unsalted butter room temperature
  • 1 ½ cups powdered sugar
  • 1 tbsp milk

Method
 

  1. Place the egg in a bowl of warm water.
  2. Preheat the oven to 350F
  3. Line 2 baking sheets with parchment paper
  4. In the bowl of a stand mixer or hand mixer, mix together the butter and brown sugar for 2-3 mins until it turns light in color.
  5. Scrape down the sides of the bowl and add the vanilla and egg.
  6. Mix well then add in the peanut butter and mix until just combined.
  7. Add flour, salt and baking soda.
  8. Lastly, add in the oat.
  9. Scoop portions on the prepared baking sheets, leaving space for them to spread.
  10. Bake for 12-14 mins.
  11. Allow to cool on baking sheet for 10 mins before moving to a wire rack to finish cooling.
  12. While cooling, prepare the filling:
  13. Mix butter and peanut butter together until smooth.
  14. Add in the powdered sugar and milk and mix on medium high until smooth and creamy.
  15. Add to a piping bag and cut off the tip to pipe filling on the cookies.
  16. Pipe filling onto half of the cookies and top with the other half.

Notes

Make sure to use quick cooking oats, regular oats will not soften and will create a different texture. Make sure you beat enough air into the filling that is smooth. If it’s not smooth enough it will be difficult to squeeze out of the bags. The cookies are going to spread, the cookies pictured are 2 tbsp capacity, for smaller cookies stick with the 1 tbsp recommendation
