How to Make the Chocolate Cake

The first general procedure that you have to do is the chocolate cake. First, preheat the oven to 350F, and while doing so, spray two 8 inch round cake pans with non-stick spray or cake release. 

Next, add all ingredients to an electric hand or stand mixer and beat until well combined. Pour into prepared baking pans and bake for 35 to 40 minutes. 

Once done, remove from the oven and let cool for at least an hour. After an about, use a serrated knife to remove the “dome” from the cake and wrap each cake in plastic wrap and freeze for at least 2 hours.  

This step is critical because chocolate cakes produce more crumbs than non-chocolate cake. Decorating a frozen cake will help eliminate cake crumbs in the frosting later.

How to Make the Mint Chocolate Cookies Buttercream

Another step of the process that you have to go through is the making of the buttercream. Begin by creaming butter and shortening together.  Then, add powdered sugar, vanilla, and half of the liquid to the bowl and mix until incorporated. Once done, add one drop of green gel food coloring.

Subsequently, finely chop 6 to 8 mint Oreos and add to the frosting. Add in half of the remaining heavy cream and mix on high for 5 to 7 minutes, the frosting will double in size, the color will lighten and the texture will become silky. Remember, only add the last .05  tbsp of liquid if needed.

How to Decorate the Mint Oreo Cookies N Crème Cake 

For the decoration, you need to add the frosting first. Add frosting to the first layer of cake and use an offset spatula to spread buttercream on the cake. Then, add chopped Oreos to give it an extra crunch and place the top layer of cake over it sandwiching the frosting and Oreos.

Furthermore, to reduce cake crumbs, always “frost the frosting.” Once you make the initial frosting constant, as you move around the cake only add frosting to frosting all the way around. You can use a butter knife (or spoon), starting at the base of the cake pull in an upward diagonal motion to create a rustic design. Smooth out the top of the cake with your offset spatula and add additional frosting to a piping bag fitted with a 1M tip. 

Finally, place Mint Oreos around the top of the cake and fill in the gaps with piped buttercream and you’re done.

As your Chef, I have a few tips for you. First, if you use pans large than 8 inches, increase the amount of buttercream. Second, the Oreos for the buttercream needs to be FINELY chopped or else it will get stuck in the piping tip. Lastly, if it gets stuck, do not try to forcefully squeeze it out or else you’ll burst the piping bag. Instead, use a knife to unclog the tip.

Method

BUTTERCREAM INSTRUCTIONS:
  1. Cream butter and shortening together.
  2. Add powdered sugar, vanilla, and half of the liquid to the bowl.
  3. Mix until incorporated.
  4. Add one drop of green gel food coloring (electric green is pictured, but mint or leaf green would work)
  5. Finely chop 6-8 mint Oreos and add to the frosting
  6. Add in half of the remaining heavy cream.
  7. Mix on high for 5-7 mins, the frosting will double in size, the color will lighten and the texture will become silky
  8. Only add the last .05 tbsp of liquid if needed.
HOW TO DECORATE:
  1. Add frosting to the first layer of cake (I used a standard-sized ice cream scooper for this).
  2. Use an offset spatula to spread buttercream on the cake.
  3. Add chopped Oreos to give it an extra crunch.
  4. Place top layer of cake over it sandwiching the frosting and Oreos.
  5. To reduce cake crumbs, always “frost the frosting.”
  6. Using a large offset spatula spread the frosting onto the side of the cake.
  7. Once you make the initial frosting constant, as you move around the cake only add frosting to frosting all the way around.
  8. It doesn’t need to be smooth or perfect, just frost the entire cake before removing any excess.
  9. Use a butter knife (or spoon), starting at the base of the cake pull in an upward diagonal motion to create a rustic design.
  10. Smooth out the top of the cake with your offset spatula.
  11. Add additional frosting to a piping bag fitted with a 1M tip.
  12. Place Mint Oreos around the top of the cake and fill in the gaps with piped buttercream.

Notes
